Low Fat Cheddar and Broccoli Soup - Weight Watchers Recipe
1 tablespoon onion flakes (could use more or less to taste)
1 (16 ounce) package frozen chopped broccoli
2 - 3 handfuls of carrot shreads or matchstick carrots (kind and amount is your preference, can be omitted)
4 (14.5 ounce) cans fat free chicken broth
1 (1 pound) loaf processed 2% milk cheese food (Velveeta brand unless store brand is available), cubed
2 cups skim milk
1 tablespoon garlic powder
2/3 cup cornstarch
1 cup water

In a stockpot, add chicken broth and onion flakes. Turn on med to med high heat. Stir in broccoli and carrots, once low boiling begins turn down heat and simmer until broccoli is tender, 10 to 15 minutes.

Reduce heat, and stir in cheese cubes until melted. Mix in milk and garlic powder.

In a small bowl, stir cornstarch into water until dissolved. Stir into soup; cook, stirring frequently, until thick approximately 30 minutes.

I figured up the total Weight Watchers points for the whole batch to be approximately 25 points. The number of servings for the whole batch could vary depending on the size bowl you have, I'm thinking about 10 - 12 bowls in a batch. I feel the points would be around 2 - 3 points per bowl. Obviously adding cheese to your bowl of soup would add points, but it is good that way!
