Low Fat Cream of Potato Soup Recipe
1 24 oz bag frozen hashbrowns, obrien style (with peppers and onions)
1 pkg country gravy mix
1 32 oz carton low fat or non fat chicken broth
1 14 1/2 oz can low fat or non fat chicken broth

lightly brown hash browns in non stick stock pan.
add chicken broth and gravy mix, bring to a boil.
turn down the heat and simmer for at least 30 min.
the soup will thicken as it cooks. for weight watchers -- 2 points per 1 cup of soup.
top with cheese, croutons, bacon bits as desired (and dont forget to add the points too!)
