Ma & Pa’s Chicken Vegetable Soup Recipe
2 cans chicken broth, plus 1 ½ cans water
2 lg. cans cooked chunked chicken
6- 7 peeled, cubed potatoes
1 26 oz. can diced tomatoes
1 15 oz can sliced carrots, green beans, corn & peas
Add to taste:
approx. 1 - 1 ½ tbsp dried minced onion
salt & pepper
Combine all ingredients, except chunk chicken. Bring to a boil for 15 minutes, reduce heat to a simmer for another 15 minutes or until potatoes are tender. Add chicken last to prevent breaking of the chunks. Yields about 1 ½ gallons of soup.
